Zucchini spaghetti or Zoodles with pesto

Hello my foodies! How are you doing today?

Feeling like something healthy but still delicious?
If your answer is positive, keep reading!

After yesterday's recipe of the healthy version of the tradicional pancakes, today I want to share with you this fit version of the traditionally Italian dish Spaghetti with pesto that I prepared (and ate) yesterday.

Zucchini spaghetti with pesto.
The secret of this recipe is using zucchini instead of pasta for the spaghetti.

By making this simple change you'll get a much healthier version of this dish, lower in calories and carbohydrates and richer in vitamins which is great for weigh-loss diets or just to increase the amount of vegetables of out diet. Something that will do as no harm, that's for sure.

After this brief introduction, let's get into the recipe itself.

Ingredients (3 people):

  • 2 zucchinis
  • 100 g. of mushrooms
  • 1/2 bag of cherri tomatoes
  • 1 handful of spinach
  • Pesto sauce
  • 1 chicken breast
  • Salt
  • Olive oil

First of all, you'll need a special tool called Spiralizer. This will make the zucchini slicing task much easier.
Spiralizer
I purchased it through Amazon for around 8-9 euros. Here you have a link if you are interested: Spiralizer in Amazon.

After getting this tool, you'll most probably need to know the slicing technique to use it. But don't panic! It's supersimple, as you can see in the next video:

One useful tip when using the spiralizer would be to avoid overripe zucchinis because if they are too soft they will probably break and will make it so much harder to get the spaghetti shape.

The hardest part is done once you have the spaghetti. All you need to do now is boil them or steam them for 3 minutes, unless you prefer them raw as they are, of course.

After that, wash the veggies, chop them and cook them in a frying pan with a little bit of olive oil.

Do the same with the chicken: dice it and cook it in the same pan. You can do it all together with the veggies or separately, as I chose to do. It's not a problem because it doesn't take long to brown it.

And that's it!

Put a small amount of zucchini spaghetti in a plate. Add a few full spoons of veggies and chicken. Then dress it with some pesto sauce and mix it all together. And don't forget the bread!

Here you have a pic of it right before I devoured it!

It's superdelicous and yummi! Trust me! I would say it even tastes better than its traditional version.

Good appetite!! and enjoy your meal, always!!

Oat and banana pancakes

Good morning everyone!!

Today I'm here with a brand new recipe. This morning I was feeling like trying something different from the boring toasts or cookies so I decided i would give it a go to this gorgeous-looking "fit" pancakes.

They look good, don't they?

Oat and banana pancakes.
They turned out absolutely delicious and they are quite easy to make so let's get started!

Here you have the recipe that I used.

Ingredients (10 pancakes aprox.):

  • 3-4 full spoons of oat flakes
  • 2 eggs
  • 2 egg whites
  • 1 ripe banana
  • 1 pinch of baking powder
  • 6 drops of vanilla extract
It's easy. The only thing you need to do is blend all the ingredients together with a mixer or blender until you get a liquid and homogeneous mix.

If you are one of those who appreciate a few more minutes of sleep in the morning, don't worry! You can prepare the mix the night before and keep it in the fridge until the next morning.

Once we have our mixture ready, next step is heating up a frying pan with just a little bit of olive oil so that the pancakes do not stick to the surface of the pan.

When the frying pan is warm enough it's time to pour our mixture. Just a small amount will do and remember to pour it in the centre and to let it spread in order to give it the perfect, rounded shape.

As you can see in the photograph, bubbles will start to pop up in the surface of our pancake to let us know that they are ready to be flipped over.

We can make use of a flat spatula or throw them up in the air if we are brave enough to do so.

And that's it, as simple as that, you've cooked your first pancake.

So far, you should have obtained something similar to this:

Do the same with the rest of the mixture and you will have an amazing breakfast that will keep you full for the whole morning thanks to the oat flakes mainly.

You can accompany them with a little bit of jam, honey, syrup....or Nutella, as I chose to do. It goes perfectly with the banana flavor and, you know, chocolate is always good.

I hope you liked it and let me know if you tried them!
